Beaver Creek Winter Wine Excursion

Any chance I have to get out on the mountain, you’ll find me strapping on my ski boots and hitting the slopes. This year, I decided to do something a little different and find a winter activity that my whole family could enjoy together. When researching excursions in Vail Valley, the Beaver Creek Winter Wine Excursion immediately jumped out at me. Combining a strenuous yet fun snowshoeing adventure followed by an immediate wine and cheese reward? Count me in!

We began the morning meeting at the Beaver Creek Nordic Center where we selected our equipment and met with our guide, Carrie. Due to the lack of early season snow, Carrie altered the typical route of riding the Strawberry Park Express lift to McCoy Park and instead took us up the Buckaroo Express Gondola, which is free for those without skis.

From here, there were several options to hike the mountain. An eager and fit group, we asked for a more challenging route, and Carrie delivered by weaving us through the narrow passages the aspens left us.

After approximately 2 hours and 5 miles later, we had hiked our way back down to the base of the Strawberry Park Express Lift to begin the second half of the day at the Osprey Fireside Grill. We removed our snowshoes and gear and settled into the mountainside restaurant at the helm of Executive Chef Ryan Murray.

Displayed on our table were boards of highly curated cheeses and charcuterie. From black pepper goat cheese to chorizo and soppressata, we were treated to some of Colorado’s finest. A wine pairing of California chardonnay and pinot noir accompanied our food. The waiters shared the notes on the selections but for the most part, left us to our own conversations rather than impart a thorough education. To top off the meal, we enjoyed a sweet potato and graham cracker pudding paired with prosecco.

The entire four-hour experience, from the snowshoe hike to the wine pairing at The Osprey, was truly one of a kind. The joy of being in the mountains coupled with delicious and comforting foods is the best way to spend a day with family and friends.
